This was my 2nd Birthday dinner. My parents let us choose our “birthday dinner”. My brothers would choose McDonalds or something like that.
No, not me. I wanted tacos.
32 years later, and tacos are still my absolute FAVORITE meal. I could eat tacos every day and not get sick of them. Ok – maybe not every day (my stomach probably won’t be happy with me), but you get the idea. When I was younger, my mom made just regular ground beef tacos. Old El Paso taco seasoning, soft flour tortillas, shredded lettuce, chopped tomato, shredded cheddar cheese, and hot sauce. And it was honestly the best meal ever. Nothing beats a homemade taco dinner and I think that is why it has remained a favorite of mine throughout the years.
I wanted to share this picture with all of you because, quite frankly, nothing has changed. I’m a wee bit older (ok, I’ll be 34 on Saturday – eeek!), but my love of tacos and hot sauce has remained with me through the years.
Side note: I’m thankful those bangs grew out eventually. Just awful.
